"I
suffered from a dairy allergy for over 18 years and never knew
it! My condition was not diagnosed as a food related allergy even
after repeated visits to doctors.
When I discovered that my symptoms were associated with dairy
products my research showed that there was a lot of
conflicting information about dairy food conditions. I decided to put my product development skills
and food experience to work to develop a
cookbook that could help people understand and manage their condition.
I started by
recreating my favorite recipes, only to discover that
dairy alternatives do not always perform (or taste) as dairy ingredients
do in cooking. That's how I came to decide on the fundamental theme of
my book - "What's a dairy-aholic to do when dairy is no longer an
option?" Craving the rich, smooth, creamy texture of dairy, I began
creating my own recipes. Recipes For
Dairy-Free Living contains my favorite
dairy-free recipes.
Writing this book has taken me on a wonderful journey of spirit. By
embracing my heritage and its influence on my appreciation of food,
this book has given me the opportunity to fully understand the deep love
I have for my family and its culinary traditions past
and present." |
